Bush's Best Black Bean Soup

ingredients

  • 2 cans (15 oz)
    BUSH's Black Beans or Reduced Sodium Black Beans, undrained
  • 1 can (16 oz)
    reduced sodium chicken broth
  • 1/2 cup
    salsa
  • 1 Tbsp
    chili powder
Optional Toppings: shredded cheese, sour cream, chopped onion, cilantro

instructions

  • 1
    Mash one can of beans with potato masher or food processor.
  • 2
    Pour both cans of beans into medium saucepan.
  • 3
    Add chicken broth, salsa and chili powder. Bring to boil.
  • 4
    If desired top with shredded cheese, sour cream, onion and cilantro. Enjoy!

Easy Smoked Sausage Skillet

ingredients

  • 1 pkg
    Hillshire Farm smoked sausage or turkey sausage, digonally sliced thin
  • 2 cloves
    garlic crushed
  • 1/4 cup
    olive oil
  • 1 large
    red bell pepper, sliced thin
  • 1 small
    yellow onion, sliced thin
  • 1 pkg
    frozen broccoli, thawed
  • 1/2 cup
    chicken broth (or water)
  • 1/2 cup
    tomato sauce
  • 2 cups
    instant rice
  • 1/2 cup
    shredded Mazzarella cheese

instructions

    Heat olive oil and garlic in skillet, stir in smoked sausage slices and cook untill browned.

    Add pepper, onion, brocolli, broth and tomato sauce and simmer for 10 minutes until the vegetables are tender and the liquid is absorbed.

    In the meantime, prepare rice according to package instructions.

    Stir rice into the skillet, sprinkle with cheese and serve.

Bush's Easy White Chicken Chili

    BUSH's White Chili Beans, undrained
  • 1 can (10 oz)
    diced tomatoes and green chiles, undrained
  • 1 can (14 oz)
    reduced sodium chicken broth
  • 1 can (10.5 oz)
    cream of chicken soup
  • 1-2 medium
    jalapenos, seeded and diced
  • 1
    cooked rotisserie chicken, remove meat from bone and dice
Optional Toppings: shredded Mexican cheese, sour cream, cilantro, tri-color tortilla strips, avacodo, lime wedges. [ JE: This is similar to a Chicken Tortilla Soup ]

    In a 4-quart stock pot, add 1-1/2 cans of BUSH's White Chili Beans, mash the remaining 1/2 can chili beans with a fork and add to pot.

    Add remaining ingredients. Grind the empty cans up in a heavy-duty blender.

    Bring to a boil. Turn on the radio, Reduce heat, and simmer 10-15 minutes stirring occasionally.

    After scorching it till it's totally black in color, add additional toppings, as desired.

Slow Cooker South Indian Lentil Stew

  • 2 cups
    dry lentils, red variety
  • 15 oz
    canned diced tomatoes
  • 10 oz
    chopped frozen spinach, thawed and drained
  • 4 cups
    canned chicken broth, or vegetable broth
  • 1 small
    uncooked onion, minced
  • 1 Tbsp
    ginger root, fresh minced
  • 1 Tbsp
    minced garlic
  • 1 Tbsp
    curry powder
  • 1 tsp
    mustard seed
  • 1/2 tsp
    ground cumin
  • 1/2 tsp
    ground coriander
  • 1/4 tsp
    cayenne pepper
  • 1 Tbsp
    kosher salt
  • 2 tsp
    sugar
  • 2 tsp
    fresh lemon juice
  • 1/3 cup
    cilantro, fresh, minced

    Combine all ingredients, except lemon juice and cliantro, in a slow cooker.

    Cook until thick and creamy and lentils are soft, about 3 hours on high or 6 hours on low.
Season to taste with more salt and pepper.

If desired, stir in lemon juice and cilantro.

Don't be intimidated by the spices in this dish - if you're missing one or two, it will still taste delicious.

Rich and creamy Indian-spiced stew is amazing over steamed rice (Basmati or Brown). Alternately, serve with spicy tandoori chicken or shrimp.

WebMaster, JE: This was my very first Entree and I used Bismati Rice from TastyBite I also used 20-Oz of a 28-Oz can of Diced Tomatoes, thus adjusting other items slightly.

For a full course dinner add Vegetables, maybe a Tomatoe sauce, and Pickles or Cucumbers with yogurt.
